Chicken salad

Ingredients
  

  • 2 cooked chicken breasts shredded or diced (about 2 cups)
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt or more mayonnaise
  • 1 celery stalk finely chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup grapes halved
  • 1/4 cup toasted almonds chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional add-ins: chopped apples dried cranberries, sliced avocado, or diced bell peppers

Instructions
 

  • In a large mixing bowl, combine the shredded or diced cooked chicken, mayonnaise, Greek yogurt, chopped celery, chopped red onion, halved grapes, chopped toasted almonds, chopped parsley, and lemon juice.
  • Mix all the ingredients together until well combined. If you prefer a creamier texture, you can add more mayonnaise or Greek yogurt.
  • Season the chicken salad with salt and pepper to taste. Adjust the seasoning as needed.
  • If desired, add any optional add-ins like chopped apples, dried cranberries, sliced avocado, or diced bell peppers for extra flavor and texture.
  • Once everything is mixed together, cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together.
  • After chilling, give the chicken salad a final stir and taste, adjusting the seasoning if necessary.
  • Serve the chicken salad on sandwiches, wraps, lettuce cups, or enjoy it on its own as a light meal.
