Chicken salad

Ingredients
- 2 cooked chicken breasts shredded or diced (about 2 cups)
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt or more mayonnaise
- 1 celery stalk finely chopped
- 1/4 cup red onion finely chopped
- 1/4 cup grapes halved
- 1/4 cup toasted almonds chopped
- 2 tablespoons fresh parsley chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional add-ins: chopped apples dried cranberries, sliced avocado, or diced bell peppers
Instructions
- In a large mixing bowl, combine the shredded or diced cooked chicken, mayonnaise, Greek yogurt, chopped celery, chopped red onion, halved grapes, chopped toasted almonds, chopped parsley, and lemon juice.
- Mix all the ingredients together until well combined. If you prefer a creamier texture, you can add more mayonnaise or Greek yogurt.
- Season the chicken salad with salt and pepper to taste. Adjust the seasoning as needed.
- If desired, add any optional add-ins like chopped apples, dried cranberries, sliced avocado, or diced bell peppers for extra flavor and texture.
- Once everything is mixed together, cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together.
