Vegetarian chili

Vegetarian chili is a hearty and nutritious dish made without meat, featuring a flavorful blend of beans, vegetables, and spices. Common ingredients include kidney beans, black beans, tomatoes, bell peppers, onions, corn, and chili powder, although variations abound. Vegetarian chili offers a protein-rich and fiber-packed meal, suitable for vegetarians and omnivores alike. It's versatile and can be customized to suit individual tastes, whether you prefer it mild or spicy. Served with toppings like shredded cheese, sour cream, avocado, or cilantro, vegetarian chili is a comforting and satisfying meal, especially on chilly days.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 carrot diced
  • 1 zucchini diced
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz tomato sauce
  • 1 can 14 oz kidney beans, drained and rinsed
  • 1 can 14 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Optional toppings:

  • shredded cheese sour cream, sliced green onions, chopped cilantro, diced avocado

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  • Add the minced garlic, diced bell pepper, carrot, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables are slightly tender.
  • Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, and corn kernels.
  • Add the chili powder, ground cumin, paprika, dried oregano, salt, and pepper to the pot. Stir well to combine all ingredients.
  • Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, stirring occasionally, to allow the flavors to meld together and the vegetables to fully cook.
  • Taste the chili and adjust the seasoning if needed.
  • Serve the vegetarian chili hot, garnished with your favorite toppings such as shredded cheese, sour cream, sliced green onions, chopped cilantro, or diced avocado.
