Fish tempura
Fish fillets or pieces coated in a light tempura batter and deep-fried until crispy, often served with a dipping sauce and vegetables.
Ingredients
For the Fish:
- 1 lb 450g white fish fillets (such as cod, haddock, or halibut), cut into bite-sized pieces
- Salt and pepper to taste
- 1/2 cup all-purpose flour for dusting
For the Tempura Batter:
- 1 cup all-purpose flour
- 1 cup ice-cold water
- 1 large egg
- 1/4 cup cornstarch
- 1/2 tsp baking powder
For Frying:
- Vegetable oil for deep frying
For the Dipping Sauce:
- 1/2 cup soy sauce
- 1/2 cup dashi Japanese soup stock or water
- 1/4 cup mirin sweet rice wine
- 1 tbsp sugar
- Grated daikon radish
Instructions
Preparing the Fish:
- Season the Fish: Season the fish pieces with salt and pepper. Lightly dust them with flour, shaking off any excess. This helps the batter stick to the fish.
Preparing the Tempura Batter:
- Mix the Batter: In a bowl, lightly beat the egg with the ice-cold water. Add the flour, cornstarch, and baking powder. Mix lightly with chopsticks or a fork until just combined. The batter should be lumpy and should not be over-mixed, as this ensures a light and crispy texture.
Preparing the Dipping Sauce:
- Make the Sauce: In a small saucepan, combine the soy sauce, dashi (or water), mirin, and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool. Optionally, add grated daikon radish before serving.
Frying the Fish:
- Heat the Oil: Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Ensure there is enough oil to submerge the fish pieces completely.
- Fry the Fish: Dip each piece of fish into the tempura batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil. Fry in batches to avoid overcrowding the pot. Fry for about 2-3 minutes or until the fish is golden and crispy. Use a slotted spoon to remove the fish and drain on paper towels.
Serving:
- Serve Immediately: Serve the fish tempura hot with the dipping sauce on the side. Accompany with steamed rice, a light salad, or tempura vegetables for a complete meal.
