Chicken curry
Chicken curry is a popular dish enjoyed in various cultures worldwide, known for its aromatic spices and rich, flavorful sauce. It typically consists of tender chicken pieces cooked with a blend of spices, aromatics such as onions, garlic, and ginger, and a tomato or coconut-based sauce. The dish varies greatly in flavor, texture, and spice level depending on the region and personal preferences. Chicken curry can be made in countless ways, with each recipe offering its own unique twist on the classic dish. It's often served with rice, bread, or other grains, making it a hearty and satisfying meal enjoyed by people of all ages.
Ingredients
- 500 g chicken cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion finely chopped
- 3 tomatoes chopped
- 3 cloves garlic minced
- 1- inch piece of ginger grated
- 2 green chilies slit lengthwise (adjust according to spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder adjust to taste
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
Prepare the Chicken:
- Wash the chicken pieces and pat them dry with paper towels. Season with a pinch of salt and set aside.
Sauté Aromatics:
- Heat the vegetable oil in a large skillet or pan over medium heat. Add the cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the minced garlic, grated ginger, and green chilies. Sauté for another couple of minutes until fragrant.
Add Spices:
- Add the ground coriander, turmeric powder, chili powder, and garam masala. Stir well to combine with the onions and cook for a minute until the spices are fragrant.
Cook the Chicken:
- Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for a few minutes until the chicken starts to brown slightly.
Add Tomatoes:
- Add the chopped tomatoes to the pan and mix well. Cook until the tomatoes soften and release their juices, stirring occasionally.
Simmer:
- Once the tomatoes are cooked down into a thick sauce, add a cup of water to the pan. Stir well, cover, and simmer over low heat for about 20-25 minutes, or until the chicken is cooked through and tender. Stir occasionally and add more water if needed to adjust the consistency of the curry.
Finish and Serve:
- Once the chicken is cooked, check for seasoning and adjust if needed. Garnish with fresh coriander leaves.
- Serve hot with rice, naan bread, or roti.
