Banoffee pie

Banoffee pie is a delectable British dessert made from a combination of bananas, cream, and toffee, all layered on a base made from crumbled biscuits and butter. The name "banoffee" is a portmanteau of "banana" and "toffee," reflecting its key ingredients. Often, a layer of whipped cream is spread on top, and it may be garnished with chocolate shavings or coffee powder. The pie is known for its rich, sweet, and creamy texture, making it a beloved treat for many. It was reportedly invented in the 1970s at The Hungry Monk restaurant in East Sussex, England, and has since become a popular dessert worldwide.

Ingredients
  

For the Crust:

  • 250 g digestive biscuits or graham crackers
  • 100 g unsalted butter melted

For the Toffee (Dulce de Leche):

  • 1 can 397g sweetened condensed milk

For the Filling:

  • 3-4 ripe bananas sliced

For the Topping:

  • 300 ml heavy cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • Grated chocolate or cocoa powder for garnish

Instructions
 

Prepare the Crust:

  • Crush the digestive biscuits or graham crackers into fine crumbs using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin.
  • Mix the crumbs with the melted butter until well combined.
  • Press the mixture into the base and sides of a 23cm (9-inch) springform or tart pan to form an even crust.
  • Refrigerate the crust for at least 30 minutes to set.

Make the Toffee (Dulce de Leche):

  • To make the dulce de leche, you can either:
  • Stovetop Method: Place the unopened can of sweetened condensed milk in a large pot and cover it with water. Bring to a simmer and cook for 2-3 hours, ensuring the can is always submerged in water. Allow it to cool completely before opening.
  • Alternative Method: You can buy pre-made dulce de leche from the store to save time.

Assemble the Pie:

  • Spread the cooled dulce de leche over the chilled crust.
  • Arrange the sliced bananas evenly over the toffee layer.

Prepare the Topping:

  • In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until it forms soft peaks.
  • Spread the whipped cream over the banana layer.

Garnish and Serve:

  • Garnish the pie with grated chocolate or a dusting of cocoa powder.
  • Refrigerate the pie for at least 1 hour before serving to allow it to set.

Serve:

  • Slice and serve your delicious Banoffee pie.
