Apple pie

Apple pie is a classic dessert featuring a flaky, buttery crust filled with a sweet and spiced apple mixture. Traditionally made with tart apples like Granny Smith or Honeycrisp, the filling is flavored with sugar, cinnamon, and often a hint of nutmeg or lemon juice. The pie is baked until the crust is golden and the apples are tender, creating a comforting and timeless treat. Often enjoyed warm with a scoop of vanilla ice cream, apple pie is a beloved symbol of home baking and American culinary tradition.

Ingredients
  

For the Crust:

  • 2 and 1/2 cups 315g all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup 230g unsalted butter, cold and cut into small cubes
  • 6-8 tablespoons ice water

For the Filling:

  • 6-8 cups sliced and peeled apples Granny Smith, Honeycrisp, or a mix
  • 3/4 cup 150g granulated sugar
  • 1/4 cup 55g packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice optional
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsalted butter cut into small pieces

For the Topping:

  • 1 egg beaten (for egg wash)
  • 1 tablespoon granulated sugar

Instructions
 

For the Crust:

  • Mix Dry Ingredients: In a large bowl, combine the flour, salt, and sugar.
  • Cut in Butter: Add the cold butter cubes to the flour mixture. Use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.
  • Add Water: Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork the dough.
  • Form Dough: Divide the dough into two equal parts. Shape each part into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour (or up to 2 days).

For the Filling:

  • Prepare Apples: In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice (if using), lemon juice, and flour. Mix until the apples are well coated.

Assemble the Pie:

  • Preheat Oven: Preheat your oven to 425°F (220°C).
  • Roll Out Dough: On a lightly floured surface, roll out one disk of dough into a 12-inch circle. Fit it into a 9-inch pie dish, trimming any excess dough hanging over the edge.
  • Add Filling: Pour the apple filling into the prepared crust, spreading it out evenly. Dot the top with the small pieces of butter.
  • Top Crust: Roll out the second disk of dough into another 12-inch circle. Place it over the filling. Trim, fold, and crimp the edges to seal the top and bottom crusts together. Cut a few slits in the top crust to allow steam to escape.
  • Egg Wash and Sugar: Brush the top crust with the beaten egg and sprinkle with the granulated sugar.

Bake the Pie:

  • Initial Bake: Place the pie on a baking sheet to catch any drips, and bake at 425°F (220°C) for 20 minutes.
  • Reduce Temperature: After 20 minutes, reduce the oven temperature to 375°F (190°C) and continue baking for 40-50 minutes, until the crust is golden and the filling is bubbly.
  • Cool: Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling to set.
