Vegetable curry

Vegetable curry is a versatile and flavorful dish originating from Indian cuisine. It typically consists of a medley of vegetables such as potatoes, carrots, peas, and cauliflower cooked in a spiced gravy made with aromatic ingredients like onions, garlic, ginger, and tomatoes. The spice level can vary from mild to hot, depending on personal preference and regional variations. Common spices used include turmeric, cumin, coriander, and garam masala, which infuse the dish with warmth and depth of flavor. Vegetable curry is often served with rice or bread such as naan or roti, making it a satisfying and nutritious meal for vegetarians and omnivores alike.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1- inch piece of ginger grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 2 cups mixed vegetables e.g., potatoes, carrots, peas, cauliflower, bell peppers, chopped
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz coconut milk
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions
 

  • Heat the vegetable oil in a large skillet or pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and grated ginger to the skillet, and cook for another 2 minutes until fragrant.
  • Stir in the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly to toast the spices.
  • Add the chopped mixed vegetables to the skillet and cook for 5 minutes, stirring occasionally.
  • Pour in the diced tomatoes (with their juices) and coconut milk. Stir well to combine all ingredients.
  • Bring the curry to a simmer, then reduce the heat to low and let it cook for 15-20 minutes, or until the vegetables are tender and the flavors have melded together. Stir occasionally to prevent sticking.
  • Taste the curry and adjust the seasoning with salt as needed.
  • Serve the vegetable curry hot, garnished with fresh cilantro leaves if desired. Enjoy with steamed rice or naan bread.
