Lamb kebabs

Lamb kebabs are skewered and grilled pieces of marinated lamb, often served with pita bread, tzatziki sauce, and salad. They're a popular street food in Middle Eastern and Mediterranean cuisines.

Ingredients
  

  • 1 lb 450g lamb meat, cubed
  • 1 onion finely chopped
  • 2 cloves of garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Skewers

Instructions
 

Marinate the Lamb:

  • In a bowl, combine the cubed lamb with chopped onion, minced garlic, ground cumin, ground coriander, paprika, turmeric, salt, pepper, and olive oil. Mix well to ensure the meat is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for the best flavor.

Prepare the Skewers:

  • If you're using wooden skewers, make sure to soak them in water for at least 30 minutes before threading the lamb onto them. This prevents the skewers from burning during cooking.

Thread the Lamb:

  • Once the lamb has marinated, thread the cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

Grill or Broil:

  • Preheat your grill or broiler to medium-high heat. If using a grill, lightly oil the grates to prevent sticking. Place the skewers on the grill or under the broiler, and cook for about 4-5 minutes on each side, or until the lamb is cooked to your desired doneness and has a nice charred exterior.

Serve:

  • Once cooked, remove the skewers from the grill or broiler and let them rest for a few minutes. Serve the lamb kebabs hot with your favorite sides, such as rice, salad, or grilled vegetables. You can also serve them with a dipping sauce like tzatziki or mint yogurt sauce for extra flavor.
