Beef burritos

Beef burritos are a popular Mexican dish featuring a flavorful beef filling wrapped in a large flour tortilla. They are versatile and can be customised with various ingredients and toppings. Beef burritos are a hearty and satisfying meal, perfect for a quick dinner or a make-ahead lunch. They can be customized to suit individual tastes and are great for serving a crowd.

Ingredients
  

For the Beef Filling:

  • 1 pound ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup tomato sauce or diced tomatoes
  • Optional: 1 cup black beans rinsed and drained
  • Optional: 1 cup corn kernels

For Assembling:

  • 6 large flour tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup guacamole

Instructions
 

Cook the Beef Filling:

  • In a large skillet, heat a bit of oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
  • Add the diced onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  • Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.
  • Add the tomato sauce (or diced tomatoes) and stir to combine. If using, add the black beans and corn. Reduce the heat and let it simmer for about 10 minutes until the mixture thickens slightly.

Prepare the Other Ingredients:

  • While the beef mixture is simmering, warm the flour tortillas. You can do this in a microwave by wrapping them in a damp paper towel and microwaving for about 30 seconds. Alternatively, warm them in a dry skillet over medium heat for about 20-30 seconds on each side.
  • Arrange the other ingredients (shredded cheese, cooked rice, shredded lettuce, sour cream, salsa, and guacamole) in small bowls for easy assembly.

Assemble the Burritos:

  • Lay a warm tortilla on a flat surface. Spoon a portion of the beef filling onto the center of the tortilla.
  • Add a layer of rice, shredded cheese, lettuce, and any other desired toppings.
  • Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top, securing the filling inside. Repeat with the remaining tortillas and filling.

Serve:

  • Serve the beef burritos warm. You can top them with additional salsa, sour cream, and guacamole, or serve these on the side.

Notes

Customisation:
Feel free to add or substitute ingredients based on your preferences, such as sautéed bell peppers, jalapeños, or different types of cheese.
Make-Ahead: These burritos can be made ahead of time, wrapped in foil, and stored in the refrigerator for a few days. Reheat in the microwave or oven before serving.
Freezing: To freeze, wrap each burrito tightly in plastic wrap and then in foil. Freeze for up to 3 months. Reheat from frozen in a microwave or oven.
