Chicken parmesan

Chicken Parmesan, also known as Chicken Parmigiana, is a classic Italian-American dish that features breaded and fried chicken cutlets topped with marinara sauce and melted cheese. It typically consists of boneless, skinless chicken breasts that are pounded thin, breaded with a mixture of breadcrumbs and Parmesan cheese, and then shallow-fried until golden and crispy.

Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs you can use Italian seasoned breadcrumbs for extra flavor
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil for frying

For Assembly:

  • 2 cups marinara sauce
  • 8 slices mozzarella cheese
  • Fresh basil leaves chopped (optional)
  • Cooked pasta for serving

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

Prepare the Chicken:

  • Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick. Season both sides of the chicken breasts with salt and pepper.

Coat the Chicken:

  • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
  • Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere. Repeat with the remaining chicken breasts.

Fry the Chicken:

  • In a large skillet, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.
  • Once the oil is hot, add the breaded chicken breasts to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Transfer the chicken to a paper towel-lined plate to drain excess oil.

Assemble the Chicken Parmesan:

  • Spread a thin layer of marinara sauce in the bottom of a baking dish.
  • Place the fried chicken breasts in the baking dish. Spoon additional marinara sauce over the chicken, covering each piece.
  • Top each chicken breast with two slices of mozzarella cheese.

Bake:

  • Transfer the baking dish to the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.

Serve:

  • Garnish with chopped fresh basil, if desired.
  • Serve the Chicken Parmesan hot, with cooked pasta and extra marinara sauce on the side, if desired.
