Greek salad
Greek salad is a refreshing and flavorful dish that combines fresh vegetables, olives, feta cheese, and a simple vinaigrette dressing. Enjoy your homemade Greek salad as a refreshing side dish or light meal! It is perfect for summer gatherings or as a healthy option any time of the year.
Ingredients
For the salad:
- 4 large tomatoes chopped into bite-sized pieces
- 1 English cucumber diced
- 1 red onion thinly sliced
- 1 green bell pepper seeded and chopped
- 1/2 cup Kalamata olives pitted
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- Optional: 1/4 cup chopped fresh mint leaves
- Optional: 1/2 cup thinly sliced red or yellow bell pepper for color
For the dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
Prepare the salad ingredients:
- In a large salad bowl, combine the chopped tomatoes, diced cucumber, thinly sliced red onion, chopped green bell pepper, Kalamata olives, crumbled feta cheese, chopped fresh parsley, and optional chopped mint leaves and sliced bell pepper.
Make the dressing:
- In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
Assemble the salad:
- Pour the dressing over the salad ingredients in the bowl.
- Toss gently to coat all the vegetables and feta cheese with the dressing.
Chill and serve:
- Cover the salad bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
Serve:
- Before serving, give the salad a final toss to redistribute the dressing.
- Serve the Greek salad chilled, garnished with extra crumbled feta cheese and a sprig of fresh parsley if desired.
