Mini quiche

Mini quiche

Mini quiches are delightful appetisers or snacks. They are perfect for parties, brunches, or as a tasty snack. Feel free to customize the filling with your favorite ingredients!

Ingredients
  

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup 1 stick cold unsalted butter, cut into small cubes
  • 3-4 tablespoons ice water

For the filling:

  • 4 large eggs
  • 1/2 cup milk or heavy cream
  • Salt and pepper to taste
  • 1/2 cup grated cheese such as cheddar, Swiss, or Gruyere
  • 1/4 cup chopped vegetables such as spinach, bell peppers, onions, mushrooms
  • 1/4 cup cooked and crumbled bacon ham, or sausage (optional)
  • Chopped fresh herbs such as parsley, chives, or thyme for garnish

Instructions
 

Prepare the crust:

  • In a food processor, combine the flour and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together and forms a ball.
  • Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven:

  • Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter.

Roll out the dough:

  • On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
  • Use a round cookie cutter or a glass to cut out circles slightly larger than the mini muffin tin openings.

Line the muffin tin:

  • Gently press each dough circle into the mini muffin tin, shaping it to fit and making sure it covers the bottom and sides.
  • Prick the bottom of each crust with a fork to prevent it from puffing up during baking.

Prepare the filling:

  • In a mixing bowl, whisk together the eggs and milk or cream until well combined. Season with salt and pepper.
  • Stir in the grated cheese, chopped vegetables, and cooked meat (if using).

Fill the crusts:

  • Spoon the egg mixture into each mini crust, filling them almost to the top but leaving a little space for the filling to puff up during baking.

Bake the mini quiches:

  • Place the mini muffin tin in the preheated oven and bake for 15-20 minutes, or until the filling is set and the crust is golden brown.

Serve:

  • Remove the mini quiches from the oven and let them cool in the tin for a few minutes.
  • Use a small knife or offset spatula to gently loosen the edges and remove the mini quiches from the tin.
  • Garnish with chopped fresh herbs before serving. Enjoy your delicious mini quiches warm or at room temperature!
